Sun-a-rise....
Just recently I've been getting up...
...early enough to see the sunrise.
They haven't all been as spectacular as this and, of course, the sun rises quite late during January in this part of the world. When sunrise is around 3.00 am, in May, I'll still be sleeping!

A New Year of Toastmasters
Fabulous first meeting of the year at Toastmasters! In the Table Topics session I had to say what I had in my pockets that would help me survive on a desert island. Must have done OK because I won the coveted certificate! Whoopee!

Going Back into the Water
Soon be back in the water - well, tomorrow afternoon in fact. Hull lovely and clean and anti-fouled. The few 'dings' repaired. Polished and ready for adventures! Now we need some nice weather and a few cooperative cod.

I made these Dutch raisin doughnuts for New Year's Eve. My mother-in-law used to make these and I'm continuing the tradition. They are delicious.

Fish Salad

Our traditional New Year's Eve Fish Salad consists of a quantity of boiled, mashed potato; as many tins of fish (all sorts) as we feel like; chopped pickled silverskin onions and chopped gherkins; tomato ketchup, mayonnaise, olive oil, garlic, salt, pepper and whatever else in the way of seasoning that grabs our fancy or is available in the spice cupboard. One year the salad was pretty hot (we use less cayenne pepper now) - it improves with keeping until the next day.
We never know quite how it's going to turn out - but it's always been tasty.
Garnish with hard boiled eggs, prawns, pickled gherkins etc.
Serve on a bed of lettuce - or not.

Banana Cake
This Banana Cake with thick lemon icing...
...is full of mixed peel and walnuts too.
You need:
A 1.5lb loaf tin greased and floured (I use a baking paper loaf/cake case)
8oz self raising flour
pinch of salt
1/4 teaspoon mixed spice
4oz butter or margarine
1lb ripe bananas
6oz caster sugar
4oz mixed peel
2 oz walnuts chopped
2 large eggs, lightly beaten
For the icing:
4oz sifted icing sugar
juice of half a lemon (approx)
walnut halves
candied orange and lemon slices
- Sieve flour, salt and spice into a large bowl
- Rub in butter until mixture looks like fine breadcrumbs
- Peel and mash bananas
- Add bananas and rest of ingredients to the flour and beat well
- Pour into prepared tin
- Bake at 180 degrees C, 350 degrees F or Gas Mark 4 for 1 hour and 10 minutes or until well risen and golden (I test with a skewer, if it comes out clean the cake is done.)
- Leave in tin for 5 minutes to cool a little before turning out onto a wire rack to cool completely.
- When cold mix enough lemon juice with the icing sugar to get a thick, flowing icing.
- Pour over the cake and decorate with walnut halves and the candied orange and lemon slices.
- Leave the icing to set
- Invite your family or friends round and enjoy with a nice cup of tea!
